It’s getting close to Christmas and to me, that means Christmas baking! My favorite cookies to bake this season are Gingerbread Men and I plan to bake up a large batch this weekend. I thought I would share my recipe so everyone can enjoy them:
5 cups all purpose flour
1 1/2 tsp baking soda
2 tsp ground ginger
1 tsp ground cinnamon
1 tsp ground cloves
1 cup shortening (I use margarine)
1 cup sugar
1 cup molasses
2 tbsp vinegar
Mix flour, baking soda, and spices in separate bowl, set aside.
Beat shortening in different bowl, then add sugar, beat until fluffy.
Add egg, molasses, vinegar into shortening/sugar mix.
Add dry ingredients to mixture, beat well.
Chill for overnight or at least 3 hours in fridge.
Divide dough into thirds.
On lightly floured surface roll out dough to 1/8” thickness.
Cut into shapes.
Place 1 inch apart on greased cookie sheet.
Bake at 375 for 5-6 minutes.
Let cool 1 minute then move to wire rack.
